Fennel produces umbels of tiny yellow flowers atop the wispy leaves. If seeds are not desired remove flower heads to promote a bushy habit. Use the leaves in pork, veal, or fish dishes. It is also great in sauces, salad dressings, stuffing, and butter. The seeds are used as a spice in breads. A tea can be made with a few fresh sprigs of fennel to help with digestion. You may also harvest the bulb late in the season for roasting with other vegetables. Fennel is an effective treatment for respiratory congestion and is a commonly used in cough medicines.
